A silky, pure and delicious wine with a soft touch but good structure and great balance. The very first vintage of a new wine company, using grapes from a tiny, two-acre vineyard. So smooth, supple and drinkable, offering ripe black cherries, creme de cassis, spearmint and dark chocolate on a rather light body for such an inviting wine. Drink now or hold.

The 2022 Cabernet Sauvignon is the first vintage of this wine, sourced from two hillside acres of Cabernet owned by Carl Doumani and made by Aaron Pott. Available in three-packs from the winery, it's slightly lifted in character, with an almost confected edge to its aromas of mixed red and black cherries and vanilla. Plush and supple-textured in the mouth, this medium to full-bodied wine is supremely elegant and already approachable yet capable of aging and improving for up to a decade.

  • A partnership between Carolinians Adam Ressner and Jonathan Rhyne, Covalence sources grapes from Carl Doumani's small hillside vineyard in the Stags Leap District, up behind Quixote. Winemaking, under the guidance of Aaron Pott, commenced with the 2022 vintage, reviewed from bottle here. Tasted prior to bottling, the 2023 looks to be a real stunner. Given the tiny quantities of wine being produced (205 cases of the 2022 were bottled), readers will want to sign up for the mailing list, although as I write this, there still appear to be some bottles of the 2022 available.

Plush and richly layered, it features firm, compact tannins and opulent notes of dark chocolate and espresso bean. Full-bodied and luxurious, the wine exhibits restraint through its superb underlying structure, creating a well-built and beautifully crafted profile. Layers of dark berry fruit, tobacco, loamy earth, and toasty cedarwood spices add remarkable complexity. Utterly delicious and juicy, this wine is ready to enjoy now yet promises to evolve gracefully over the next two decades.

  • This marks the inaugural release of this wine, a new project guided by consulting winemaker Aaron Pott. The fruit is sourced from 0.81ha of Cabernet Sauvignon neighbouring the Shafer 'Hillside Select' vineyard, while an additional 0.4ha of Petite Sirah is sold to Helen Keplinger. Crafted as 100% Cabernet Sauvignon, the wine is native fermented in stainless steel with pumpovers and aged for 20 months in 75% new French oak. Tasting Notes

Black cherry, plum, black olive, tobacco + cigar box, blackberry, coffee, black licorice, clove, vanilla & black current.

— AARON POTT

A very soft attack of cocoa, plum, and blackberry. Soft and rich through the mid palate with chocolate and cherry, currants and black tea leads to a soft finish of blackberry, cherry and licorice.
